It’s fish and chips season. I’ve gotten a few requests for a lighter, at-home version, and I remembered this recipe we used to make at a restaurant I worked at when I was a teenager. It was fish dredged in egg, then flour, then milk, and then rolled in smashed up potato chips. Taking those bags of Cape Cod potato chips and smashing them with a tomato can was one of the highlights of my day. Then when you bake them in that crispy potato-chip coating you end up with crispy delicious fish, without standing over a fryer.
